Abstract
Xenobiotic metabolizing enzymes are involved in the biotransformation of lipophilic xenobiotics, including carcinogens, into more polar metabolites for excretion. Cytochrome P450 (CYP)-dependent monooxygenases are a family of phase I xenobiotic metabolizing enzymes that introduce a functional group such as -OH into the substrate. Some CYPs are inducible by various chemicals, such as polycyclic aromatic hydrocarbons, phenobarbital and ethanol etc.. In addition, the expression of CYPs can also be modulated by various physiological conditions, nutrients and dietary components, including obesity, fasting, carbohydrate, protein, fat, vitamins, minerals, organosulfur compounds, polyphenols and food additives. Therefore, the nutritional status and the xenobiotic metabolizing system are closely associated. In this review, their relationship is discussed.
