Abstract
It was impossible to estimate the intakes of zinc,copper and magnesium in the previous National Dietary Survey due to the lack of information on zinc,copper and magnesium contents in commonly used Food Composition Tables. In this study,the contents of these three elements in dishes from both omnivorous and vegetarian diets were quantified using an ICP (inductively coupled plasma emission spectroscopy) method. Foods were collected from student dining services in Yuan-Guan Buddhist College,Chunli,and National Defense Medical School,Taipei. Three servings of every dish provided at three meals daily were collected,weighed,combined,freeze-dried,ground up,and used for analysis. The nutrient density of zinc,copper,and magnesium in omnivorous diets was 9. 8mg/l,000kcal (zinc- rich foods included) or 6. 5mg/l,000kcal (zinc-rich foods excluded),0. 60mg/l,000kcal,and 94. 8mg/l,000kcal,respectively;that in vegetarian diets was 4. 9mg/l,000kcal,0. 74mg/l,000kcal,and 89. 1mg/l,000kcal,respectively. The nutrient density of zinc in vegetarian diets reached only 50% to 75% that of omnivorous diets. Among the foods used in these diets, cooked rice played a significant role in the supply of these nutrients, especially in vegetarian diets. Nutritionally balanced vegetarian diets rely heavily on proper food selection and diet planning.
