Abstract

What are the major food contributors of calorie, protein. carbohydrates, fat, cholesterol and crude fiber in Taiwan? This quantitative Information is not only valuable in designing dietaryquestionnaire to study the relationship between diet and diseases. but also important in nutrition cosultatlon and in making publichealth nutrition policy. Use was made of the dietary data collectedby three day food weighing method In National Nutrition Survey carriedout in 1970-1971, to search for the major food contributors of variousnutrients and dietary components. Aiming at designing a simple dietaryfrequency questionnaire, foods were classified to 152 items dependingon the similarity of the nutrient contents of foods and whether foodscan be differentiated in a dietary recall. DBASE II as used tocalculate daily, per capita energy and nutrient intake, energy andnutrient provided by each food item or category, and the relativepercent contributions of the foods. Foods contributing to the top 90 of every nutrient were listed according to their share of contribution.
