人文: 以科學的方式驗證豆渣和台農81號米的米糠、富化GABA的米糠、發芽糙米為在地研究。社會:可供停經或肥胖婦女在預防肌肉流失及胰島素阻抗時,增加全大豆、全穀及膳食纖維攝取的參考依據。經濟:停經後造成肌肉流失、腸道菌及代謝紊亂,改變飲食習慣若可以改善肌肉流失及代謝狀況,將可減少醫療支出及提升停經後生活品質及健康老化。豆渣為大豆加工後的副產物,米糠為碾米後的副產物,米糠或豆渣兩者常被視為廢棄物處理,若在本研究效果顯著將有助於提升本國廢棄農產品附加價值、減少廢棄物及氣候暖化問題。學術:探討豆渣和米糠以及富含GABA的米產品對停經且肥胖時肌肉萎縮相關機制,成果可發表於期刊或於研討會進行學術交流。
